In our new season of Cooking School Weekends we will cook Mediterranean and sample the sumptuous, healthy “cuisine of the sun”. We will taste the special flavors of Italy, Greece and Provence.

The geography of the Mediterranean plays an important role in it’s regional cuisine’s; from sun drenched and fertile valleys with distinct seasons and densely forested hills to arid rocky plains with extremes of summer and winter and of course, the bounty of the sea to exploit.

Mediterranean ingredients are legendary and shared among diverse cultures. They are noted for their color and intensity of flavor. Truffles, peppers, garlic, tomatoes, squashes, mushrooms, rosemary, basil, anise artichokes, olives, oranges, lemons and many others grow here in abundance. Ancient breads, rice, couscous and pastas based on ancient grains are basic to these cuisine’s. Seafood, poultry, lamb and wild game add richness and intensity to savory preparations in every season.

Italian regional cuisine is simple, healthy, elegant and earthy and full of flavor. Unique regional style and freshness of ingredients are the hallmark of the Italian kitchen. Provencal cuisine is pure Mediterranean peasant food. Beautiful breads, simply roasted chicken and grilled fish offset with intensely flavored condiments and sauces.
